Instructions

1. Heat vegetable oil in a large pan or wok over medium heat.
2. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
3. In the same pan, sauté onions and mixed vegetables until soft.
4. Add the cooked rice, soy sauce, and sesame oil. Stir-fry for a few minutes.
5. Return the scrambled eggs to the pan and mix well.
6. Garnish with green onions, and season with salt and pepper.
7. Serve hot as a side dish or main course.
