1. Preheat the oven to 180°C (350°F).
2. Heat olive oil in a pan and sauté garlic and onion until softened.
3. Add the tomato sauce, thyme, basil, salt, and pepper. Simmer for 5 minutes.
4. Arrange the sliced vegetables (zucchini, eggplant, bell pepper, tomatoes) in a baking dish, alternating them in a spiral pattern.
5. Pour the tomato sauce mixture over the vegetables.
6. Cover the dish with foil and bake for 30 minutes.
7. Remove the foil and bake for another 15 minutes, until vegetables are tender.
8. Garnish with fresh parsley and serve.
