1. In a mixing bowl, combine minced meat, chopped onion, green chilies, ginger-garlic paste, and all the spices.
2. Add fresh coriander and mint leaves. Mix well and knead the mixture for 5-7 minutes.
3. Optionally, add an egg to bind the mixture and ensure it holds together during grilling.
4. Shape the mixture onto skewers, pressing it tightly to form long kebabs.
5. Heat a grill or pan and brush with oil. Grill the kebabs on medium heat, turning occasionally until they are golden brown and cooked through (about 10-15 minutes).
6. Serve hot with naan or rice, and a side of mint chutney or salad.
